Process: Natural
The coffee is processed using the Natural (Dry) Process, where fully ripe coffee cherries are carefully dried in the sun before the beans are removed from the fruit. This traditional method enhances sweetness and body while developing vibrant fruit characteristics, resulting in a rich, full-bodied cup with balanced acidity and notes of dried fruit and berries.

This coffee is produced from the traditional Yemeni varieties Tuffahi and Duwaeri, heirloom cultivars that have adapted to the country's rugged mountain landscapes over centuries. These varieties are known for producing complex, sweet, and fruit-forward coffees that beautifully express the unique terroir of Yemen.

Located in the renowned coffee-growing region of Bani Matar, the Al-Sayh valley sits at an altitude of 2,000–2,400 meters above sea level. Its subtropical climate, seasonal rainfall, and access to natural spring irrigation create ideal conditions for coffee cultivation. These unique environmental factors allow the cherries to mature slowly, producing beans with outstanding quality and distinctive flavor.

Over 98% of cultivated arabica varieties trace their origins to Yemen. Arabica, originally found in Ethiopia's forests, was brought to Yemen over 600 years ago, where it was domesticated and adapted to the arid mountains. Over centuries, the genetics of Yemeni coffee evolved, becoming distinct from their Ethiopian ancestors. These Yemeni trees eventually became the "mother" trees for nearly all modern cultivated varieties.
